Cook beef in sautee pan. Add taco seasoning and water, according to package instructions. Drain, rinse, and add kidney beans.
Seed, peel if desired, and chop small the cucumber. Shred the cheese. Slice olives and tomatoes as desired. Wash and tear or slice the lettuce. Slice the green onion and the carrot, if using.
Assemble salad. Top with sour cream.
